「프로토콜」 로스터리 카페, 연희 · 상수 · 로스팅센터, 공간 기록, 2022~

여름과 가을 사이 로스터리 카페 프로토콜을 기록했습니다. PROTOKOLL은 ‘저장’과 ‘기록’을 뜻하는 독일어에서 시작된 이름처럼 커피를 중심으로 기록의 과정을 담아내는 공간입니다. 기록은 두터운 수첩 속에, 사유하는 시간 안에, 연필을 들어 쓰는 행위에서 오랜 날들에 걸쳐 보이거나 보이지 않는 모든 형태로 남습니다. 로스팅 프로파일과 추출 레시피부터 각자의 관점에서 감각한 커피 경험까지 다양한 방식의 아카이브를 만들어갑니다. 공간에 들어서면 들려오는 음악과 커피 내음, 각자의 시간에 집중하는 사람들을 배경으로 보이는 가로수들이 있습니다. 남긴 사진은 외부 간판, 공간 3면의 대형 액자, 포스터로 만들어졌으며 포스터 안에는 사진과 짧은 문장들을 기록의 형식으로 적어두었습니다.

Between summer and autumn, I documented the protocol of a roastery cafe. Like its name, which comes from German words meaning “storage” and “record,” PROTOKOLL is a space that holds the process of recording through coffee. Records remain over long periods of time in many visible and invisible forms, in thick notebooks, in moments of thought, and in the act of writing with a pencil. From roasting profiles and brewing recipes to coffee experiences sensed from each person’s perspective, PROTOKOLL builds an archive in many different ways. Upon entering the space, one encounters music, the scent of coffee, tree-lined streets seen in the background, and people focused on their own time. The photographs were made into exterior signage, large framed works on three sides of the space, and posters. Inside the posters, photographs and short sentences were arranged in the form of records.
